Sometimes in a game, characters die. It can be sad losing a loved character to the whims of the dice, or the machinations of the gods, or the stupid roleplaying of the player.
The surviving heroes sharing a drink and reminiscing about the departed is a nice in-character way to acknowledge their role and impact on the story of the campaign world.
If you do it right, you can even pay tribute to their drunken bar room brawling!
Commentary by memnarch (who has not seen the movie)
Hmmm, those could be useful, assuming the parts concerning Nute are still valid and don't depend on the Empire still being around. Finally killing/deleting Nute from the Galaxy is going to take a lot of time and effort. Or a super plot device of some kind. Which... would just leave all of the movie villains like Snoke, Kylo, and Hux still around to cause problems. So pretty much the whole movie villain cast.
Even though there's next to no characterization for Nunb in the movie, I enjoy how they get a bit of time in the spotlight here. While not a lovable NPC, they're certainly quite memorable with their obsession. Well, more memorable than the untranslated movie character who only showed up in the Millennium Falcon anyway.
Maybe Poe had memory damage of some kind? Allan is certainly dropping all sorts of hints about knowing things Poe would have thought or felt. Or maybe that's just Jim leaking through here. Finn is certainly not helping matters with the "bad acting"; that didn't drink line is almost as bad as the other lies.

Nien Nunb: Her plans for the final, definitive defeat of the Empire and Nute Gunray.
Snap Wexley: Hey, she was looking for those before she passed away.
Allan: Good luck, bro. See you on the other side.
Finn: Bro? We only met an hour ago.
Allan: Yeah, we did. But I feel like I’ve valiantly led us on a daring escape from the First Order already!
Finn: After this we’ll share a drink and tell stories about your brother Poe.
Allan: He would have liked that.
Finn: Poe... told me you didn’t drink...
Allan: Well I’ll just have one for him then!
