While it may be difficult for some roleplayers to conceive of the idea of ever having too many weapons, the true gaming aficionado realises that there is a price to pay for carrying around extraneous equipment. What you want to do is stockpile your extra weapons somewhere. Like on a gunship.

Explodium! The enemy base was hit by one TIE fighter and "kaboom!". And, they did not just get a crate of blasters, it's a crate of blast rifles. And a rocket launcher.
Just don't ask what the red button on the base of the rocket launcher does. Or better yet, don't press it to try to find out.

Actually, I don't think that's too much. First of all, rocket launchers are always important. Always.
Second of all, having extra weapons can be really important/helpful for modifications, repairs, getting some extra ammo, bartering etc. Not to mention the fact that the Rebellion in general would likely be very grateful for a crate of fresh weaponry.
Of course, in this instance K-2 is going to hog all the rifles, and definitely reserve the rocket launcher for his sole use. I'm wondering how he intends to use all the rifles himself? Will he just switch guns when one runs out of ammo, or will they serve as ammo for the rocket launcher (somehow)? And will he look like Arnold Schwarzenegger in Commando?

Bria: What? No. We went to a weapons research facility and didn't even loot any weapons.
K-2SO: I stole a whole crate full of weapons!
Bria: Oh, awesome!
K-2SO: Looks like... about two dozen blast rifles and a rocket launcher.
Chirrut: I never thought I'd say this, but I think we may possibly have a few too many weapons.
